Kinilaw Mural

More than a dish, kinilaw is a balance of heat and brightness, mellowed by citrus and vinegar. In the composition, you can see a school of Galunggong (mackerel scad) used to make kinilaw, and the arrangement of food is transformed into a seascape celebrating the beloved Galunggong. The school of Galunggong is depicted in swirling motion, evoking the circular motion of mixing the dish in a bowl, where preparation becomes movement and flavour becomes colour.
